Cake: Heat oven to 350°F. Grease pan. In medium bowl, stir dry ingredients flour, baking powder and salt until well blended. In another bowl, beat granulated sugar and 3/4 cup softened butter with electric mixer on medium speed. Beat in 1 1/2 teaspoons vanilla and eggs until well blended. Add flour mixture and 1 1/4 cups milk, beating well. Pour batter evenly into pan. Bake 30 to 35 minutes or until toothpick inserted comes out clean. Be sure to cool before frosting. Boxed cake mix also works well in a pinch for your Easter celebration to make a delicious cake! At the end of the day, cake batter is all the same and this peep cake would even make for great Easter peeps cupcakes.
