Summer Recipe: Chimichurri Sauce | Stroller in the City


One of my favorite things to do in the summer is barbecue with my family. When I think of the smell of BBQ, I’m flooded with fun memories of family and friends and the excitement of summertime. There are endless recipes that can be made on the grill and we have the entire rest of the summer to test some out! I can’t wait to make new BBQ memories with my family at our home this month, especially now that we actually have our own BBQ. One recipe that’s been on repeat in our home, quick Chimichurri Sauce!

Versatility

Chimichurri sauce is so versatile, I use it as a sauce or marinade on steaks, shrimps, even chicken! There’s a few ways to make it either with cilantro or parsley. I typically lean towards parsley. If you want to spice it up a little, go heavier on the red pepper flakes. Our favorite way to enjoy this chimichurri recipe is with fresh herbs and a little bit of lemon juice on flank steak.

This delicious recipe is easy to store in the fridge to create other summer recipes out of and a great way to get some use out of your grill! If you’ve never made homemade chimichurri sauce, don’t be intimidated! It’s a good sauce to work your way towards a spicy level with, but you can definitely make it mild if you have kids. Fresh ingredients are always best when it comes to grilled meat marinades and sauces. Try out this green sauce on your favorite cut of steak and let us know all the delicious ways you enjoy it!

My favorite thing about this recipe is that it stores well in an airtight container and you can enjoy it in all your different ways. Use it as a salad dressing, a delicious sauce for a skirt steak, dipping sauce or even marinating pork tenderloin. There are endless things do to with leftover chimichurri sauce but the traditional way to enjoy the tangy flavor is with a steak for grilling season. I personally think the herbed sauce is even better the next day. With simple main ingredients, this easy recipe  is more than a personal favorite, but a delicious way to host guests in the summertime. Unique flavors meet grilled meats to take this recipe to the next level.

Recipe:

1 Cup Parsley – make sure to cut the stems

3-4 Cloves Garlic

2 Tablespoons Fresh Oregano (if dried 2 tsp)

1/2 Cup Olive Oil (my fav Fancy Peasant GEVOO)

2 Tablespoons Red Wine Vinegar

1 Teaspoon Sea Salt

1/4 Teaspoon Fresh Black Pepper

1/4 Teaspoon Red Pepper

Directions:

Place parsley, garlic, and oregano into a food processor or chopper. Once chopped, add olive oil, vinegar, salt, pepper, and red pepper. Super easy! And be sure to taste, sometimes I’ll add in more red pepper or more olive oil depending on how the parsley absorbs the oil. Finally, you can top this marinade on grilled shrimp, chicken, and steak!
